I love pomegranate seeds. When in season they are deliciously sweet & are like jewels. They are packed with anti-oxidants & hence associated with reduced cancer risk & vitamins C and K; vitamin C is important for good immune system function, wound healing, healthy gums & for good iron absorption. Vitamin K is important for maintaining strong, healthy bones as well as proper blood clotting.
This salsa makes a delicious accompaniment to my beetroot & chickpea burgers, available in a separate blog.
Preparation time: 10 mins
Serves: 4
1 red onion, diced
1 tbsp lemon juice
1 tbsp cider vinegar
large pinch of salt
Seeds from 1 large pomegranate
1/3 cucumber, diced
1 tbsp extra-virgin olive oil
1 tsp honey
3 tbsp fresh coriander, finely chopped
2 tbsp fresh mint, finely chopped
Salt & pepper
1 tbsp ground chia seeds
Method:
Mix together all the salsa ingredients in a bowl. The milled chia seeds will help absorb some of the juices & give a nutritional boost.
