Cauliflower Turmeric Steaks

Meat-free steak night? Yes! Turmeric-roasted cauliflower steaks! By slicing cauliflower into thick slices, coating them in coconut oil & spices & roasting them, you have an easy, healthy (cheery yellow) low carb side dish eg. see photo below.

Turmeric-roasted cauliflower steaks with pomegranate salsa, kale falafels, tomato salad & avocado coriander dip (recipes also available)

I am a recent convert to cauliflower (cauliflower rice recipes & cauliflower pizza crust elsewhere in this blog) & this recipe certainly is a new favourite of mine. It is very easy to prepare, full of flavour & is a great way to get more veg in.

Serves: 2

Preparation time:

15 mins (includes 10 mins soaking time for the cauliflower)

Cooking time: 25-30 mins

Ingredients

Half a large head of cauliflower

1 1/2 tbsp coconut oil, melted

1 tbsp ground turmeric

12g fresh root ginger, finely chopped

2 garlic cloves, chopped finely

1/2 tsp chilli flakes (fresh chopped chilli is great if you have it!)

Juice of 1 1/2 limes (lemon juice also works too!)

Salt & pepper

Method

Preheat the oven to 170ºC & line & grease a baking sheet with coconut spray oil.

Soak the cauliflower half in warm water for 10 mins. Invert on a tea towel & allow excess water to drip away.

Slice the cauliflower into thick slices, approx 2.5cm thick.

Wearing gloves (unless you want to look like a minion, as the tumeric will stain!) & in a shallow dish, mix together the melted coconut oil, turmeric, ginger, garlic, lemon (or lime juice) & a pinch of salt.

Dip & coat the cauliflower steaks on both sides in the turmeric sauce. (A pastry brush may help). Place on the greased baking sheet & sprinkle with chilli flakes (or fresh chopped chilli) & a little ground black pepper

Bake in the pre-heated oven for 25-30 mins, when the cauliflower is soft (test with a fork) & golden brown. Enjoy!

    • Thank you! Cauliflower is so versatile. I use it as cauliflower rice (eg. vegan sushi & Moroccan spiced salad) & as a pizza base too (recipes also available in this blog). Happy cooking!

  1. I keep meaning to make cauli steak but I haven’t got round to it!!
    This tumeric sauce sounds nice, and thanks for the tip about using gloves- I don’t want to look like a minion!
