Healthy Lemon Sponge Cake with Creamy Cheesecake topping
This family favourite uses apple sauce instead of fat & is drenched with a zingy decadently creamy mascarpone cheese topping & finished off with lemon zest.
The base of the cake is a classic lemon sponge, using coconut sugar for a much lower GI than refined white sugar.
This makes a great celebration cake or a perfect compliment to afternoon tea or coffee.
