Green Tea Balls

I love green tea, figs, & lemon, so what better than to put them all together to make an energy ball?

These green tea lemon balls deliver anti-oxidants, Omega-3, fibre, Vitamins C & E, magnesium, zinc, selenium, & iron. These have a lovely citrus zing from the lemon zest & rind. They are coated in ground flaxseed with ground almonds, brazil nuts, walnuts & co-enzyme Q10, making sure you will be fueled up for the day.

Makes approx 26 balls

Preparation time: Approx 35 mins

Ingredients

40g Rolled oats

60g Almonds 2015-12-06 13.12.45

10g walnut pieces

110g Dried figs

40g pitted dried dates

2 tbsp Desiccated coconut

Grated zest of 1 lemon & juice from half of the lemon

1 tbsp Matcha green tea powder

2 tbsp Tahini

2.5tbsp date syrup or agave

1 tbsp water

1-2tbsp Ground flaxseed with almonds, brazil nuts, walnuts, coenzyme Q10 (plus some extra to roll the balls in)

 

Method:

Make an oat flour by blending the oats in a blender or food processor to a fine dust. Add the remaining ingredients & whizz to make a thick dough.

Transfer into a bowl & roll into balls.

Roll each ball in the Ground flaxseed with almonds, brazil nuts, walnuts, coenzyme Q10.

Refridgerate. Keeps for 2 weeks in the fridge. These also freeze well. Enjoy!
