Tuck in to these green tea balls! I love green tea, coconut and lemon, so why not combine all these ingredients into one recipe?
These green tea lemon balls make super convenient snacks, be that in the lunch box, pre or post-work out or simply to have with a cup of tea after dinner when you want something small and sweet.
These balls deliver anti-oxidants, omega-3 fatty acids, fibre, vitamins C and E, magnesium, zinc, selenium, iron and protein. These have a lovely citrus zing from the lemon zest & rind. They are coated in ground flaxseed , making sure you will be fueled up for the day.
Makes: approx. 26 balls
Preparation time: approx 35 mins
- 40g Rolled oats
- 60g Almonds
- 10g walnut pieces
- 75g Dried figs
- 75g pitted dried dates
- 2 tbsp Desiccated coconut
- Grated zest of 1 lemon & juice from half of the lemon
- 1 tbsp Matcha green tea powder
- 2 tbsp Tahini
- 2.5 tbsp date syrup or agave
- 1.5 tbsp protein powder (soya bean, pea or whey)
- 2.5 tbsp water
- 1-2tbsp Ground flaxseed (plus some extra to roll the balls in)
Make oat flour by blending the oats in a blender or food processor to a fine dust. Add the remaining ingredients & whizz to make a thick dough.
Transfer into a bowl & roll into balls, then roll in ground flaxseed to coat.
Refrigerate. Keeps for 2 weeks in the fridge. These also freeze well. Enjoy!
