A healthy guilt free treat! These healthy brownies are gooey, rich & sweet with a sour contrast coming from the cherries. The sweetness comes from honey & dates. Cacao powder provides the chocolatey richness & slight bitterness (I use organic cacao). These feel decadent & it is hard to believe they are actually good for you! My work buddies loved these!
By adding ground flaxseed & protein powder, you can make these even healthier.
Makes about 16 brownies
Preparation: approx. 40 mins
Ingredients:
650g sweet potato (approx 2 medium-sized)
280g dates
70g dried cherries
80g ground almonds
80g wholemeal flour
20g ground flaxseed
20g protein powder (I use vegan soya-derived)
4 tbsp cacao powder
3 tbsp honey
Method:
Line & grease a rectangular baking tray: 28cm X 18cm
Preheat the oven to 160ºC
Peel the sweet potatoes & cut into chunks. Place in a steamer & steam for about 18 mins until soft & mushy.
Place sweet potato in a blender with the dates & cherries & blend to form a smooth cream.
In a bowl, add the remaining ingredients.
Add the sweet potato date-cherry mix. Mix well.
Pour into the lined baking tray & bake for 25-30 mins until a skewer comes out clean.
Remove to a wire rack to completely cool before slicing up into squares
