These delicious balls are great energy boosters, full of anti-oxidants, gluten-free & have no added refined sugar. They are brilliant clean-eating treats, especially when you are on the go (just pop some in a bag or tupperware) & great as healthy snacks for lunch-boxes & as a pre-gym snack.
What’s more, they are quick to make, require no baking & freeze really well. What’s not to love?! I sometimes serve these with a selection of other bite-sized snacks as petit fours with tea or coffee when you want something a little sweet after a meal.
Makes: 100 balls (about 1cm in size; you can roll bigger balls if you wish!)
Preparation time: 35-40 mins (depending how speedy you are in rolling balls!)
Ingredients:
1/2 cup walnuts
1/2 cup raw cashews
1 tbsp chia seeds
1 tbsp pumpkin seeds
1 tbsp sunflower seeds
1/2 cup dried cherries
1/4 cup pitted dates
1/4 cup goji berries
1 tbsp protein powder (I use soya-derived)
2 tbsp cacao nibs
1 tbsp cacao powder
1.5 tbsp water
1 tbsp lemon juice
Method:
Place the nuts & seeds in a food processor or blender and whizz to to form a crumbly mixture.
Add the dried cherries, dates, goji berries, protein powder, cacao nibs, cacao powder, water & lemon juice & whizz again to make a sticky dough.
Using your hands, roll into small balls about 1cm in size.
Set in the freezer for about 20 mins before chomping! These last for about 3-4 weeks in the refrigerator, but much longer if frozen & used as required.
