This sundried tomato paste is great as a tapenade or pesto & is full of flavour. It is deliciously sweet from the tomatoes, savoury from the parmesan & luxuriously thickened with ground nuts & ground chia seeds. It makes a lovely homemade gift, is easy to make & healthy too !
Eat on toast, with pasta, with cold meat in a salad or an antipasti condiment. I love mine on toast to accompany soup or as brunch along with smoked salmon, eggs & avocado mash.

Smoked salmon & scrambled eggs with Sundried tomato, brocolli, kale, chia tapenade, avocado mash
Makes: 1 jar (serves 4)
Preparation: 8-10 mins
Ingredients:
50g sundried tomatoes
30g almonds
40g grated parmesan
1/2 cup olive oil
50g kale
50g brocolli
1 plump clove of garlic
1 tbsp milled chia seeds
15g pumpkin seeds
1 tsp dried oregano
In a food processor, blend together sundried tomatoes, almonds, grated parmesan, extra-virgin olive oil, a pinch of salt, pepper, kale, brocolli, garlic, milled chia seeds, pumpkin seeds & oregano to a chunky paste. Takes approx 4 mins.
Decant into a jar (if to store or gift) or small bowl. Keeps in the refrigerator for about 1 week.
