
Decadent healthy delights. No bake too!
I do enjoy Millionaire’s shortbread but find it incredible sweet & bad for you. Here is a healthy alternative with no added refined sugars & just dates & honey as sweetener.
It has the same decadence of Millionaire’s shortbread with a biscuit-like texture base & a fudgey, sweet & rich topping. Mmmm.
The nutritional content is boosted with ground flaxseed & ground chia seeds to deliver an omega, fibre & protein hit. I make up a tray, set them in the freezer, dice up the tray into small squares until required. These freezes beautifully & are delicious with a cup of tea or coffee.
Makes: about 34 squares
Preparation time: approx. 30-40 mins
For the base:
175g whole almonds
75g walnuts
25g oats
25g ground flaxseed
200g dates
1.5tbsp coconut oil
Topping
200g dates
75g honey or vegan substitute eg. agave
5 tbsp smooth peanut butter
2 tbsp ground chia seeds
3 tbsp cacao powder
Line a 10 X 6″ rectangular baking tray with greaseproof paper & coconut oil.
Base. Soak the dates in boiling water for 10 mins to soften. Drain. Blend these hydrated dates til smooth in a food processor or blender.
Then add the oats, almonds, walnuts, ground flaxseed & coconut oil. Whizz so that some coarse pieces of nuts remain (this will add texture)…
Spoon this mixture into the lined baking tray, flatten using a spatula so that the base is flat & smooth. Put in the freezer for 30 mins to set.
Topping
Whilst the base is setting, make the topping. Soak 200g dates with boiling water & then drain. In a food processor or blender, blend the hydrated dates to a smooth paste then add the peanut butter, ground chia seeds & cacao powder along with 60ml of hot water. This will form a chocolatey mixture:
Pour this caramel-like topping on top of the base, once the base is set. Place in the freezer for 2 hours before cutting into little squares. Delicious!
