Kale is the ‘queen of greens’, It is crammed full of nutrients: iron, fibre, vitamin A, C, K, anti-oxidants, omega-3 & so is excellent for general health ranging from good bone health, effective blood clotting, an efficient immune system, reducing blood cholesterol levels & offers protection against cancer through its high content of suphur-based chemicals.
This hummus also includes milled chia seeds to increase the protein, fibre & omega-3 content. Best if all, it only takes minutes to prepare in a blender!
Serves: 4
Preparation: 5 mins
Ingredients:
400g can of chickpeas
4 cups of kale
3 garlic cloves
5 tbsp of extra-virgin olive oil
4 tbsp of lemon juice
2 tbsp natural yoghurt, coconut yoghurt works well for vegans
1 tbsp tahini
1/4 tsp salt
black pepper to taste
1 tbsp milled chia seeds
2 spring onions
1/3 cup fresh parsley
1/2 tsp cayenne pepper
Method:
Place all ingredients in a blender & combine! Season to taste.
Store in an airtight container for about 7 days.
It is delicious with crudités, on toasted rye bread & in salads.

To make a spicy version, add 1 tsp ground cumin, 1/2 tsp chilli powder
