Energy boosting Flapjacks

A great breakfast bar or pick-me up treat to beat the sugar dips & as a pre-work out energy boost. This is another family favourite….there is depth of flavour from the peanut butter, chewiness from the dates, goji berries & prunes & the crunchiness from the seeds. Every mouthful is an oaty fruit & seed delight! Much better than syrupy flapjacks & very easy to make!

Goji berries are a terrific superfood. I can’t get enough of them. They are a fantastic source of anti-oxidants (approximately 500 times more vitamin C than an orange & more beta-carotene than carrots!). They great for fighting off the winter sniffles!

Gojis help protect against degenerative diseases like rheumatoid arthritus, Alzheimer’s, cancer & macular degeneration. They also may improve eyesight & may improve male fertility. Some studies suggest that they help in general wellbeing, calmness & atheletic performance too.

 

Sugar-free Nut, Seed, Goji, Flax Protein-enriched Energy bars

Preparation time: 15 mins
Baking time: 13-15 mins

I love using the high grade Pulsin Natural soya protein powder which is suitable for vegetarians, low fat, made without solvents, has no added sugars or sweeteners and has a lovely mild flavour. It has the added benefit of dissolving easily too, so great to integrate into your baking.

The best goji berries I have sourced are from RealFoodSource as they are sulphur dioxide free, organic, plump & unlike most other brands and also, by far the cheapest!
