Thai Beef Salad with Cashews & Chia


A tasty, eye-catching, nutrient-packed, high protein, low carb meal using beef steak, but this dish also works well with pork & poultry. The beauty? It takes under 25 minutes to prepare!

Chia seeds are amazing little gluten free whole grains which have only recently been recognised as a superfood. Legend has it that the Mayans & Aztecs went to war on these little seeds to sustain themselves. They are packed with fibre, anti-oxidants & high quality protein (almost 14%!).


Along with  calcium, magnesium &phosphorus, chia is excellent for good bone health. They are also high in omega-3, so  great to help stabilise blood sugar, lower blood pressure and proven to be beneficial in Type 2 diabetes patients.


Preparation time: approx. 15 mins
Cooking time: 5-10 mins (depending on how well done you like your steak)


Making the salad: Finely slice carrots & red pepper into strips. Finely slice radishes & spring onion. Spiralise your courgette using a spiraliser * or slice into thin julienne strips. Mix with bean sprouts. Reserve some spring onion slices as a garnish at the end.

Making the salad dressing: Chop finely ginger, garlic, coriander & (optional) Thai basil if you can find it; Thai basil has a unique aniseed flavour. Mix with the zest & the juice of one lime. Add 2 tbsp Thai fish sauce & 1/2 tbsp soya sauce or tamari, 1 tbsp olive oil, 1 tsp dried chilli flakes & 1tsp clear honey.

Cooking the buckwheat noodles: Boil & set aside once cooked. Then mix with the salad with 2/3 of the salad dressing & plate up. Season.

Steak: Fry the steaks to the desired time. After they have rested, slice. Arrange slices on the buckwheat noodle salad & scatter chia seeds, cashews & spring onion slices on top. Drizzle the remaining Thai salad dressing on the steak. Enjoy!

* Top tip: If you are unsure about investing in a desktop spiraliser, manual spiralisers which work a bit like pencil sharpeners work well for courgettes & are a lot cheaper.
