
Fresh, tasty & a perfect accompaniment to meals, sandwich fillings & as a dip
Don’t you just love sweet, fresh, juicy tomatoes? This vibrant tomato salsa recipe celebrates these attributes, complimenting them with fresh coriander, red onion, chilli & olive oil. This salsa makes a super accompaniment to meals, inside sandwiches or wraps or as a dip at parties.

I love using a variety of tomatoes when possible (as pictured), but this salsa tastes just as good with regular red ones.

A beautiful bounty!
Tomatoes are incredibly good for you, packed with anti-oxidants, principally lycopene which helps to protect against certain cancers, (especially that of the prostate, cervix & stomach). They are also rich in vitamins (C, A, K ) & minerals (vitamin K), all of which are required for healthy body function, from good vision to blood clotting.
This salsa is quick to make & tastes so good, you wont want to buy shop bought salsa ever again (which often contain so many additives, including sugar).
Note: if making as a dip (eg. to eat with potato chips), you may prefer to dice your tomatoes into small pieces rather than slice them.
Preparation time: 10 mins
Serves: 2 (as a side dish or a small bowl of salsa)
Ingredients:
1 small red onion
10g fresh coriander
1/4 tsp of chilli flakes or 1 fresh chilli (green or red work fine)
300g tomatoes, ideally a variety if possible
A generous drizzle of extra virgin olive oil
Salt & ground black pepper, to taste
Method:
Finely chop the red onion, coriander & fresh chilli (if using) & add to a small bowl. If using dried chilli flakes, simply add directly to the bowl.
Finely slice the tomatoes & add to the bowl. Drizzle over with extra virgin olive oil. Season with salt & pepper to taste & combine.

Variations:
Sprinkle the top with ground flaxseed to boost the nutritive profile
Add feta or vegan cheese & olives for a Greek-salad style twist
