What is the colour of Kermit (the frog), healthy, low carb & delicious? Spinach smoothie bowls! Great for the health conscious & those on paleo, glutenfree & vegan diets.
I love smoothie bowls: they are full of flavour, nutrients, simple & quick to make; ideal for mornings when time is the essence. By making a smoothie bowl, rather than a drink, you can add lots of toppings to vary the texture too. I have added walnuts, strawberries & ground flaxseed in this recipe.
This recipe is dairy-free as I have used coconut water. If you prefer, you can always use milk instead (almond & coconut milk work well). Sweetness is provided by the fresh fruit & 2 dates & a banana. This smoothie bowl also contains the fruity flavoured superfood powder, baobab.
What is baobab?
Baobab powder is made from the ground pulp of ‘the tree of life’ a tree native to Africa.
Ground baobab has a delicious tangy citrus flavour, is packed with vitamin C, fibre & anti-oxidants, calcium, iron, magnesium, phosphorus, potassium, selenium, zinc & vitamins B1, B2, B6, B12, B7; nutrients to give you an energy boost, support the immune system & reduce fatigue.
Preparation: 3-5 mins
1 frozen banana
Large handful of spinach
2 tbsp baobab powder
110ml coconut water
Topping: strawberries, blueberries, walnuts sprinkle of ground flaxseed
Place all the ingredients in a food processor or blender. Blend to form a lovely green creamy mixture.
Pour into a bowl. Decorate with toppings of fruit, nuts & flaxseed.
