
Creamy herby avocado dip with a citrus tang
Mmmm! There is nothing quite like cutting into a perfectly ripe avocado!…

Hurry up & ripen!
Avocados are so good for you, containing healthy fats (mostly monounsaturated oleic acid) to help lower blood cholesterol levels, making them excellent for cardiovascular health. They also contain many antioxidants (including vitamin C & E) which help protect against ageing & cancer.
The high vitamin C content helps protect against heart disease, boosts the immune system & promotes beautiful skin (through enhanced collagen production). These alligator pears (as they were formerly known), also contain fibre, making them a super healthy addition to your diet.

Health benefits of the avocado
Avocados are incredibly versatile, delicious raw, especially in salads, sushi, mashed & eaten on toast, or used as a fat substitute when cooking (eg. avocado chocolate cookies elsewhere in this blog). They are also add luxurious creaminess when blended into smoothies, in avocado chocolate mousse & in dips.
This dip is terrific with cruditées & as an accompaniment to meals (see below!). It is also very quick & easy to make! If you like a thicker dip & want to boost the protein content, add 1 tbsp protein powder (pea, soy & organic sunflower protein powder varieties work beautifully!).
Makes: 1 small bowl (double up if required!)
Preparation time: 5 mins
Ingredients:
30g fresh coriander
Juice & zest from 1 lime
1/4 tsp salt
1/2 tsp honey or vegan alternative eg. agave
1 medium ripe avocado
1/4 cup extra virgin olive oil
1/2 cup almond milk or cashew cream
Optional: 1 tbsp protein powder (pea, soy & organic sunflower protein powder varieties work really well!)
Method:
Place all ingredients in a blender or food processor. Whizz to form a creamy dip! Simple!
