Oats so good! Porridge…the perfect cold weather breakfast. I love a bowl of porridge, especially on cold crisp mornings when I just want to stay cocooned in my cosy bed. Comforting, wholesome, warming, inexpensive and delicious. I love to vary my toppings and add different spices or super powders to keep things interesting and balance up my diet.

Here I have added a touch of the super spice cinnamon to the base. Cinnamon is high in antioxidants with anti-inflammatory chemicals that help protect against disease and promote a healthy heart. Cinnamon also helps lower blood sugar levels and can improve insulin sensitivity and therefore help prevent diabetes. It also is a natural anti-microbial, antibiotic and anti-fungal agent and so helps to fight infections, making it a terrific super food addition to this porridge.

To add to the nutritional value I have loaded this bowl up with contrasting textures and flavours of crunchy nuts, seeds, cacao nibs, soft banana, cacao-coated goldenberries and fresh juicy berries and pomegranate seeds and an optional peanut butter drizzle. This combination is so deliciously decadent; sweet, nutty, chewy and totally satisfying!

Why oats? (The science bit)

Oats are high in fibre, especially in a compound called beta-glucan, which helps lower cholesterol levels, thereby reducing blood pressure and boosting heart health. It also slows down the speed at which food moves through the digestive tract, thereby retarding the absorption of sugar. This helps stabilise blood sugar levels, making oats a great choice for diabetics.

Oats are also a good source of protein, low in fat, high in fibre and plant lignans, which may help protect against heart disease and hormone-related cancers (like breast, prostate and ovarian cancers).

So what better way to celebrate the cooler weather but with a porridge bowl?

Makes: 2 bowls

Preparation: 10 mins

Ingredients:

 

To decorate: fresh blueberries, raspberries, almonds, hazelnuts, pistachios, cacao-coated goldenberries, cacao nibs, pumpkin seeds, peanut butter drizzle (I use this brand as it is so good for drizzling!)

Method:

  • Put the oats, milk, water, spices, sweetener of choice, salt and protein powder if using, into a saucepan. Stir to combine.
  • Cook on a medium heat for 5-8 mins until thick and creamy. Add more water or milk if you like it runnier (I like mine quite thick).
  • Divide into two bowls and decorate as desired.

So that's why I love this simple spaghetti pumpkin tomato recipe. The sauce is pumpkin puree, nutritional yeast, oregano, garlic and a tsbp of chia seeds to help thicken it. Good evening! A late post tonight as I've been in the gym (double spin) after work.⠀ Dinner is a roast beetroot, quinoa salad with pomegranate, edamame beans, baby spinach, walnuts and homemade vegan feta cheese! What a way to get your plant-based protein!⠀ How to make vegan feta? Good morning! I'm back on the porridge today! Do you have a favourite way to eat oats? ⠀ .⠀ Today I have a loaded porridge bowl. To be honest, after a night of eating out, I just want clean eating food at home. Are you the same? (Or maybe I am just plain fussy and boring!! Hehe)⠀ .⠀ I have added chia seeds and protein powder to the base to add extra nutrition and a spot of ground cinnamon, ginger and cardamom. Good evening! Veganuary may be tough for those wanting to eat out, but here at @naturalbarandkitchen it has been a sheer joy! I only wish there was space for pudding! It is Birmingham's first plant-based bar and kitchen and I just can't wait to go back. Thank you for looking after us so well. ⠀ .⠀ For starters we shared this delicious loaded nacho plate with tortillas, guacamole, salsa, jalapenos, sweetcorn and black beans topped with the best cashew cream cheese I have tasted; deliciously smooth, creamy and savoury. The non-vegans amongst us loved it and thought it was regular dairy-cheese! ⠀ Then I had the legendary tofu 'fish' n chips, a lemon and kelp marinated tofu with nori, Himalayan salted fries (although I had the sweet potato fries...not pictured, but highly recommended!), fresh homemade mushy peas and vegan tartare sauce. My friends had the same or opted for the black bean burgers with cashew cheese and Himalayan salted fries. Even the drinks were vegan. Such a lovely, relaxed place to eat too. So if you are passing by Brum and want a fatastic place to eat, come here! (Ps. Good evening! A bit of a late post tonight as I've had double spin after work. Tonight is curry night! Chick pea, sweet potato and squash curry using a whopper sized squash from my sister's allotment. This curry is so comforting: you have nutty chickpeas mingled with tender chunks of sweet squash and sweet potato, creamy coconut milk, fragrant fresh coriander, gentle heat from chilli and ginger, tangy lime juice and tangy sweet tamarind.
