Ginger Garlic Chilli Salmon


High in protein, omega-3, vitamin D & packed full of flavour! Salmon is an excellent healthy choice. The high omega-3 content offers anti-inflammatory properties, helps maintain brain and nervous system health and prevent macular degeneration. Being high in vitamin D, salmon helps prevent various cancers too. But best of all, this dish is delicious & incredibly simple to make! It is one of my favourites. Your family & friends will think you have spent ages cooking this dish for them (when you haven’t!). This marinade also works well with poultry & pork.

Serves: 4

Preparation time: 10 mins.
Marinade time: half an hour or overnight if wish!
Bake time: approx 25 mins.


3 balls of stem ginger (finely sliced into strips) or a 5cm chunk of fresh root ginger (chopped finely)

3 plump garlic cloves (or 4 if on the skinny side)

3.5 tbsp dark soya sauce or tamari

Finely grated zest from half an orange (NB: the zest from 2 satsumas or clementines work well too!)

Juice from one orange (or 2 clementines or satsumas)

1 red chilli, finely chopped (or 1 tsp chilli flakes)

2 salmon fillets (around 150g each)

Salt & pepper



Make a simple marinade of stem ginger, garlic, chillies (dried or fresh) with orange juice, tamari or soya sauce. Marinade for half an hour (sometimes i leave it overnight) & then bake in the oven for approximately 25-30 mins (depending on size of salmon steak).

Serving suggestion: steamed vegetables & wholegrain basmati & quinoa.
