This beetroot and berry, omega-3 smoothie packs a nutritional punch and tastes delicious too! It is earthy from beetroot, zingy, fresh and sweet from the blueberries and strawberries and refreshing from the coconut water.

Why add beetroot to your smoothie? Beetroot is packed with so many nutrients. It is rich in nitrates which when metabolised in the body, helps reduce blood pressure (through vasolidation of blood vessels) and improve blood flow to organs so may actually boost exercise endurance/ stamina (hence often eaten by athletes) and improve brain function (pass me that Suduko puzzle now!).

Beetroot also contains an amino acid called betaine, which helps to detoxify the liver and may help to decrease heart disease risk.

The purple pigment in beetroot is actually betacyanin and this may help protect against carcinogens. Beetroot is also rich in potent anti-oxidants and anti-inflammatories so excellent for fighting disease. Its high fibre content (especially insoluble fibre) helps prevent constipation and promotes a healthy digestive tract.

To boost the nutrient profile of this smoothie further and because they taste nice (!), I have included strawberries and blueberries (both being rich sources of vitamins C, K, minerals and anti-oxidants). Other additions are chia seeds, flaxseed and omega 3 superpowder (a mixture of acai, sacha inchi and coconut) to boost the omega 3, fibre and protein content and protein powder (plant-based sources if required).

Protein powder, chia or flax seeds and banana help make this smoothie creamy, but you could substitute for steamed sweet potato or cauliflower, tofu, cashew cream or avocado. By using plant-based milk, this smoothie can be made suitable for vegans too.

 

Serves: 1

Preparation time: 5 mins (using frozen fruit)

Ingredients: 

  • 200ml milk of choice (almond, hazelnut or cashew work well)
  • 40g cooked beetroot (not the pickled in vinegar kind!)
  • 70g frozen strawberries
  • 70g frozen blueberries
  • 1 1/2 tbsp protein powder (pea, soya bean and whey varieties work well).
  • 1/2 tbsp ground flaxseed or chia seeds
  • 2 tsp omega 3 superpowder

  • 40ml coconut water
  • ½ frozen banana
  • Optional: 2cm of fresh root ginger

 

Method:

Add all ingredients in a blender or food processor.

Whizz to a smooth consistency. Pour into a glass and decorate with a few blueberries. Enjoy!

Variations:

  • Optional ingredients if you have run out of protein powder, to help thicken your smoothie: 1 banana (especially if sliced and frozen beforehand), tofu (25g), or soaked cashews (10g soaked in water),
  • Add some hemp seeds or bee pollen (if non-vegan), for an extra nutrient boost.
  • If you like it sweeter, add a Medjool date, ¼ tsp of stevia, ½ tsp agave or raw honey (if non-vegan).
  • Substitute the berries for other fruit like mango, pineapple, kiwi, apple.
  • Use chilled cold green tea instead of coconut water.
  • Add some veg. eg. a handful of lettuce, kale or a celery stick.

Good morning! How better to start the working week but with some Christmas inspired healthy mini muffins! These cranberry, orange and cinnamon muffins are enriched with extra antioxidants, fibre, protein and omega-3s using Goldenberry and Chia Powerblend @naturesheartuk and protein powder @pulsinhq. There is no refined sugar added and instead of fat I have used soya yoghurt. Good evening! What's your favourite comfort food? One of my favourites are potstickers (shitake mushroom and tofu) with stir fry veg (check out the rainbow carrots!) in a white miso @tidefordorganics and sriracha sauce, thickened with 1 tsp of chia seeds. This miso adds a umami depth of flavour, whilst the sriracha adds a bit of a chilli kick. Mmm! And it takes under 15 mins to rustle up too! .⠀ A bit about miso.⠀ *It is made for fermented soya beans and therefore protein rich. Good morning! Happy Sunday!⠀ .⠀ I have been tinkering in the Kitchen experimenting with Christmas recipes. What are the flavours of Christmas for you? For me it is warming chai-like spices of cinnamon, ginger, nutmeg, mulled wine, hot chocolate, parsnips and Brussel sprouts! ⠀ .⠀ With the former flavours in mind, I cobbled up this Cinnamon, ginger, apple and goji oat bread (Hmm, Brussel sprout and parsnip bread might not be as tasty!). Do you think it is good enough to give as a present or for the Christmas table? ⠀ .⠀ I love how the bread is speckled with, cheerful sunset-orange goji berries and the crunchy oat streusel topping is sooo delicious! Just blend together frozen mango chunks with coconut, goji berries, chia seeds, coconut milk, optional protein powder, a spot of root ginger and a squish of lime. Then decorate as desired!⠀ .⠀ Why eat mango? Happy Thursday! Pink power! To fend of the winter bugs, I have an antioxidant -rich smoothie bowl for breakfast. Hands up if you love healthy snacks! Tonight I have these no-bake cacao goji bites. What do you think? They hit the spot for something sweet, but healthy after dinner. (And there is enough leftover for 10.30am munchies and as a pre-workout snack tomorrow too..I have double spin and body pump classes).⠀ .⠀ Simply blend together nuts, dates, cacao, chia seeds, sugar-free chocolate chips, protein crispies, goji berries, optional protein powder with a little water and a pinch of salt. I also added a little energising and hormone balancing maca powder. Squish into a baking tray and level with a spatula. Pop in the fridge for 2 hrs and hey presto! Good morning! Do you have mornings when you really need to get going and but want a healthy breakfast? Today is one of those days for me! (I have an early shift at the hospital). ⠀ .⠀ What do you think of these carrot, ginger and goldenberry muffins? Soy yoghurt replaces fat, there is no refined sugar (just a little coconut sugar) and I have also added oats, flaxseed and even a little protein powder to keep me going. ⠀ .⠀ I love contrasting textures and flavours and so the muffins contain walnut and pumpkin seeds and plump, juicy, chewy and tart goldenberries. The muffins are finished off with with a crunchy sweet struesel topping. ⠀ .⠀ What's your favourite breakfast muffin combo?⠀ .⠀ .⠀ What are goldenberries?⠀ Goldenberries are succulent orange-colour superfruits that have an impressive nutritional profile: they are rich in antioxidants, anti-inflammatories, high in protein (16% protein!), and superb source of vitamin A, iron (more so than spinach), vitamin C, potassium (more so than bananas) and fibre (more so than prunes!) and B vitamins (B1, B2 and B6).
