Mango, Spinach and Wheatgrass smoothie

What better way to start the day but with a green smoothie! But how to make it taste good? I love to balance sweet mango (or pineapple) with handfuls of spinach and a dash of wheatgrass to help energise, detox and boost your immune system.

Why wheatgrass? Wheatgrass is a super addition to your diet, helping to boost metabolism (which may help with weight loss), stabilise blood sugar levels, balance hormone levels, reduce inflammation and promote detoxification of harmful toxins from the body.

Using green tea or coconut water as the base makes this smoothie super-refreshing and dairy-free. I love to boost the protein content by also adding protein powder (plant-based varieties work well like soya bean and pea as does whey), though this is optional.

By using frozen spinach and mango, the smoothie is decadently thick, but don’t worry if you they are not frozen; just add one or two more ice cubes. The smoothie will still taste just as good but will not be quite as thick.

 

Makes: 1 glass (approx. 450ml

Preparation time: 5 mins

Ingredients:

  • 150g mango
  • 3 ice cubes
  • 60g frozen spinach
  • 50g avocado
  • ½ red apple
  • 250ml coconut water or green tea (or even a mixture of the two!)
  • 2-3cm fresh ginger, peeled
  • 5 tbsp. protein powder (pea, soya bean or whey, as preferred)
  • ½ tbsp. chia seeds or flaxseed
  • ¼ – ½ tsp. wheatgrass powder

Optional: 1 tsp. baobab superfruit powder (to add lemony zing, antioxidants and fibre).

 

Method: 

  • Add all ingredients into a blender or food processor. Blend to combine. Taste and adjust. If you like it sweeter, you can add ¼ tsp stevia or ½ tsp maple or date syrup.

 

  • Pour into a glass and enjoy.

So that's why I love this simple spaghetti pumpkin tomato recipe. The sauce is pumpkin puree, nutritional yeast, oregano, garlic and a tsbp of chia seeds to help thicken it. A late post tonight as I've been in the gym (double spin) after work.⠀ Dinner is a roast beetroot, quinoa salad with pomegranate, edamame beans, baby spinach, walnuts and homemade vegan feta cheese! What a way to get your plant-based protein!⠀ How to make vegan feta? Good morning! I'm back on the porridge today! Do you have a favourite way to eat oats? ⠀ .⠀ Today I have a loaded porridge bowl. To be honest, after a night of eating out, I just want clean eating food at home. Are you the same? (Or maybe I am just plain fussy and boring!! Good evening! Veganuary may be tough for those wanting to eat out, but here at @naturalbarandkitchen it has been a sheer joy! I only wish there was space for pudding! It is Birmingham's first plant-based bar and kitchen and I just can't wait to go back. Thank you for looking after us so well. ⠀ .⠀ For starters we shared this delicious loaded nacho plate with tortillas, guacamole, salsa, jalapenos, sweetcorn and black beans topped with the best cashew cream cheese I have tasted; deliciously smooth, creamy and savoury. The non-vegans amongst us loved it and thought it was regular dairy-cheese! ⠀ Then I had the legendary tofu 'fish' n chips, a lemon and kelp marinated tofu with nori, Himalayan salted fries (although I had the sweet potato fries...not pictured, but highly recommended!), fresh homemade mushy peas and vegan tartare sauce. My friends had the same or opted for the black bean burgers with cashew cheese and Himalayan salted fries. Even the drinks were vegan. Such a lovely, relaxed place to eat too. So if you are passing by Brum and want a fatastic place to eat, come here! (Ps. Good evening! A bit of a late post tonight as I've had double spin after work. Tonight is curry night! Chick pea, sweet potato and squash curry using a whopper sized squash from my sister's allotment. This curry is so comforting: you have nutty chickpeas mingled with tender chunks of sweet squash and sweet potato, creamy coconut milk, fragrant fresh coriander, gentle heat from chilli and ginger, tangy lime juice and tangy sweet tamarind.
