Cheery orange and full of flavour, these sweet potato fritters are a real crowd pleaser. They are spiced with fresh and fragrant coriander, warming ginger and chilli and are fragrant from dried spices, including the super-spice: turmeric. Turmeric is a potent antioxidant and anti-inflammatory, which is amazing for good health (promoting a healthy immune, heart, circulatory system and beautiful glowing skin to boot!). Some studies show that turmeric may even improve brain function and elevate mood. So here’s to well-being, beautifying, brain-stimulating, good mood fritters!
These fritters are delicious hot or cold and are highly portable (making them ideal for packed lunch accompanied with some crunchy salad, or in a wrap, like a falafel). They also make great finger food for picnics, buffets and barbecues, albeit, once the weather improves!
These fritters are packed with goodness; the capsaicin in chilli helps lower blood pressure and the omega-3 fatty acids and fibre in chia seeds and ground flaxseed help promote a healthy heart, circulatory and digestive system. By stabilising blood sugar levels, both chia and flaxseed keep you feel fuller for longer and so may help weight loss. Both sweet potatoes and carrots are rich in the orange antioxidant, beta-carotene, which is important in eye, respiratory and skin health. Sweet potatoes are also rich in a prebiotic (called fructo-oligisaccharide) and so they help promote healthy digestion. And what’s more, these fritters taste great too!
I love to further boost the protein content by adding protein powder (plant-based and whey protein powder work well). If you have run out of protein powder, you can substitute for more chia or flaxseed or instant oats.
These fritters, can be made in advance and frozen, ready to be defrosted and to be cooked; by pan-frying or baking in the oven.
Makes: 12 fritters (serves 3-4)
Preparation time: 15-20 mins
Cooking time: 20-23 mins if baking. 11-12 mins if pan-frying
- 400g (2 medium) sweet potatoes, peeled and roughly chopped
- 200g carrots, peeled and roughly chopped
- 1-2 red chillies, deseeded (depending how hot you like it)
- 2 plump garlic cloves, peeled
- 1 red onion, roughly chopped
- 30g fresh coriander (a large bunch)
- 2 tsp. ground cumin
- 2 tsp. ground coriander
- 1/2 tsp. Vitalising Superpowder or ground turmeric
- 3 tbsp. ground flaxseed or chia seeds
- 4 tbsp. protein powder (pea, soya bean or whey)
- 3 spring onions, chopped finely
- 1 tsp. sea salt
- Pepper to taste
- Juice from 1 lime
- 50g (a handful) of peas
- 3 eggs, beaten
- If oven baking, preheat the oven to 180ºC and line a baking sheet with greaseproof paper and a little oil.
- Put the sweet potato, carrots, chillies, garlic, red onion, and fresh coriander in a blender or food processor and blend to coarsely chop. Tip into a large bowl.
- Stir in the spices, ground flaxseed or chia seeds, protein powder, sliced spring onions, salt and pepper, lime juice and peas and ensure all is well combined.
- Add the beaten eggs and mix well.
- Using your hands, shape into patties. Place on the prepared baking sheet and bake for 20-23 mins until golden. Alternatively, these can be pan-fried; 5-6 mins on each side.
